When they opened their Farringdon based restaurant in 1994, Fergus Henderson and Trevor Gulliver probably had little idea what a stir they’d cause to the British dining scene – yet St. John Bar and Restaurant, with it’s mantra of nose-to-tail dining, became somewhat of a foodie nirvana with their simple, staunchly British cuisine and revitalising vintage cuts such as ox heart, bone marrow and tongue. Nose-to-tail dining is everywhere these days as a result, but St. John’s – along with their Spitalfields outpost, St. John Bread and Wine – has remained resolute in it’s simplicity and straightforward approach, a no-frills, stripped back approach that they’re now bringing to London’s hotel scene with the December launch of their Leicester Street hotel, and we’ve been given a sneak peek. With stark, minimal rooms that echo the interiors of their dining establishments, the St. John Hotel promises no “hotel confusion” – lights switch on and off, the taps go from hot to cold – simple, precise and just how it should be, exactly the same as their approach to dining. There is, of course, a restaurant that will deliver exquisite, uncompromising cuisine, the St. John Hotel ‘Breakfast Bun’ has been long in the making and will be exclusive to the Leicester Street property and dinner will be served until 2am, allowing guests to fully experience all that is on offer in this brilliant West End location. Simple, refined and explicit in what it’s purpose is – St. John Hotel is set to be one of London’s finest destination hotels…
