From certain angles, Höst in Copenhagen is so spartan it resembles a prison, but the fact we still want to get sent there is a tribute to the remarkable job designers Norm have done on the restaurant. In a region known for its no-nonsense, less-is-more design aesthetics, Höst pushes the boundaries to exceptional effect. There isn’t a lot of it, but what there is, we love. Roughly textured, blank and colourless walls combine with reclaimed windows, light fittings and pallets, driftwood and slightly careworn metal. Added to this is the equally no-frills tableware, by sub-division New Norm. Occasional patches of greenery and the odd blanket scattered about the place stop the austerity from becoming overwhelming.

On the food front, Höst has invited cuisine consultants Cofoco to its table, delivering their vision of contemporary Nordic dining created with traditional ingredients. Here’s hoping this restaurant is around for a long stretch.
