Scientifically proven to lower cholesterol, high levels of the antioxidant anthocyanin, ideal for a low carb diet and looking pretty damn cool, black rice is set to be one of the healthier food trends this year. Widely cultivated across Asia, black rice contains more nutrients than both white and brown and certainly stands out in terms of presentation. Acclaimed chef Ian Pengelley, of Camden’s Gilgamesh restaurant, has put together an eclectic black rice menu that is an exciting introduction to a trend which looks set to feature heavily on Pan-Asian menus in upper class joints around the UK in 2009.

Wild Boar may not be something commonly associated with the Cotswolds, holiday homes and cider yes, but gourmet Italian style Wild Boar Salami and Wild Boar meat supplied to Michelin Star chefs, probably not. As curious as it may seem however, The Real Boar Company raise pure bred Wild Boar on in their farm which consists of 20 acres of mixed woodland and grasses at the edge of the Cotswolds. Their boar are present on the menus of restaurants totaling an impressive 13 Michelin stars and if you want to try some for yourself loin, haunch and sausages direct from their website. The real star of the show however is their sensational Wild Boar Salami.
